Whiskey Cheese

i went to the store today and picked up some ingredients for a sandwich i have been craving for quite some time.

i had a hankering for a grilled cheese with chicken, green apple, spinach, and apricot preserves. i could have sworn i had apricot preserves at home but, alas, i didn't. i used dijon mustard instead. i also found this super yummy aged cheddar with irish whiskey in it. it was magnificent! creamy and just a touch of whiskey flavor.

after i grilled it, i put the spinach in. i don't like wilted warm spinach.

along side, i had a field greens salad with tomatoes and balsamic vinagrette. a perfect lunch if i do say so myself!
