Miami Girls Weekend - Day Three (Part Two)

so, apparently it helps to bring a computer power cord with me when i travel. i forgot to bring it and my battery ran out. so, i'm a little behind with the posts.

let's go back to friday and our super yummy dinner. we started out with peach bellinis while we prepared the food.

N's friend, C, brought prosciutto wrapped asparagus for a tasty appetizer. let's just say, asparagus is not my favorite vegetable but these are so good!

we made another thai dish - halibut with chili-lime sauce, sauteed bok choy (same recipe as before), and rice. you could also use salmon for this dish.

followed by a wonderful homemade key lime pie made with love by L.


key lime pie is very dear to my stomach and heart. it is most likely my favorite dessert. it was even E's and my "wedding cake". yum!



Halibut with Chili-Lime Sauce
(serves 4)

3 tbs garlic
3 tbs cilantro
2 tbs fish sauce
1 tbs soy sauce
1/2 tsp salt
1/2 tsp ground black pepper
2 tbs vegetable oil
1 1/2 lbs halibut, salmon, tuna, snapper, or tilapia

sauce:
1/2 c fish sauce
3 tbs freshly squeezed lime juice
1 tbs sugar
1 tsp finely chopped garlic
1 tsp finely chopped fresh green chilies
1 tsp finely chopped cilantro

combine first 8 ingredients (garlic through oil) in food processor or blender. pour over fish and let marinate (covered and chilled) 30 minutes to 3 hours.

combine sauce ingredients in small bowl and whisk until sugar has dissolved. set aside.

remove fish from marinade and cook on medium hot grill about 5 minutes per side or in 425 degree oven for 10-15 minutes.

serve with rice and spoon sauce over fish and rice.
