i started out by sauteeing 1/4 of a green pepper, 1/4 of an onion, 1/4 c frozen (or canned) corn, 1/2 c black beans (rinsed and drained) in a saute pan over medium heat with just a tablespoon of olive oil. i added some chili powder, garlic powder, salt, and cumin after it was heated through.
meanwhile, i took a whole wheat flour tortilla and sprinkled a little low fat mexican shredded cheese on half.
then added the bean mixture

i folded it in half and warmed it in the same saute pan with a little olive oil cooking spray. one flip over to warm it on the other side, then cut it into fourths.
i served mine with guacamole and salsa and ended up using all the guac and only a little salsa. i used wholly guacamole 100 calorie packs. this is perfect for just me. whenever i make guacamole for just me i always have too much leftover and it browns so quickly. i keep the 100 cal packs in the freezer and just pull one out, thaw it quickly in the microwave and voila - instant portion-controlled guacamole. (of course, if i am having company over i make my own guacamole. i love it with lots of red onion and some chopped tomato.)
seriously, this lunch was super quick. i'd say 10 mins from stepping foot into the kitchen to eating it. it was a great change from my usual lunches too. so good! plus, it's packed with protein from the beans and veggies. good and good for you, my favorite!
