Pancakes

i used my new griddle again this morning. i am loving it. today was pancakes and i could make 5-6 at a time. compared to 1 at a time, this is a big deal! it's the little things in life you know? i was able to make 15 pancakes in just 3 batches. it took me all of 10 minutes.

i made some blueberry, some plain, and some strawberry. i even tried a different topping than my usual maple syrup. i was trying to think of new ways to top a pancake without using so much syrup (which, even though it's natural, it's still a sugar). i took 2 tbs of fage yogurt and mixed in 2 tsp of maple syrup. i spread that on my blueberry pancakes at it was really good. yay! i love discovering me things:)



here is my whole wheat pancake recipe:


Whole Wheat Pancakes
(makes 15 pancakes)

1 c whole wheat pastry flour
1/2 tsp ground cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c yogurt (i used 0% fage greek yogurt)
1/2 c skim milk
1 tbs agave nectar
1/2 tsp vanilla extract
1 egg
1 tbs olive oil

mix together dry ingredients with a whisk. in a separate bowl, mix all wet ingredients. slowly add dry ingredients and mix until just combined. add more milk if needed to reach desired consistency.

cook on a nonstick skillet or griddle. use about 3 tablespoons batter per pancake. add sliced bananas, blueberries, nuts, or other add ins as desired. cook until pancake surface starts to bubble and a few have burst, about 1 - 2 minutes. flip and cook 1 - 2 minutes more.
