i am happy to report my project ended up much better than it started. i seriously almost quit my 12 days of christmas cookies project at least 3 times. it was rough going at times. many of them didn't turn out well. but, luckily some of them did. i have to say my two favorite were the wasti cream cheese cookies (i am most excited about how much i was able to "clean" these up and still maintain great taste - E loved them too which is a huge plus) and the mini strawberry cheesecake tarts. the tarts were a big hit with everyone (E too:) and they were clean too.
so, without further fuss, the 12th and final cookie . . .
Gluten-Free Chocolate Chip Oatmeal Cookies*
(makes xx dozen cookies)
1 cup (2 sticks) unsalted butter, softened (i used olivio butter)
1/2 cup firmly packed brown sugar
1/2 cup agave nectar
2 eggs
1 teaspoon vanilla extract
1½ cups pamela's gluten-free baking mix
3 cups of Quaker Oats (Quick)
1 cup chocolate chips or raisins
Preheat oven to 350°.
cream together butter, brown sugar, and agave until creamy. add egg and vanilla and beat well. Beat together butter and sugars until creamy. add pamela's baking mix and then slowly add oats and chocolate chips. mix until just combined. drop teaspoon full of mix onto parchment lined baking sheets at least 2" apart as cookies will spread. bake 12-14 minutes until golden brown. transfer to wire racks to cool. store in airtight container.
*i highly recommend to enjoy these with a very cold glass of milk:)
cookies were very good and the milk just topped it off!
