More Elk

W and A have tons of elk meat so i have been using it a lot. keep in mind you can always use ground turkey or bison for a healthy alternative if you can't find elk. tonight it was la bamba casserole. its a layered casserole that is super yummy.

it has a mixture of ground meat, green chilies, onions, and spices on the bottom. then chopped tomatoes, corn, and cheese. it gets topped with even more goodness after baking.

La Bamba Casserole
(makes 6 servings)


1 lb ground turkey, bison, or elk
1 medium onion, chopped
4.5 oz can diced green chilies
2 tsp chili powder
1 tsp cumin
1/2 tsp salt
14.5 oz can chopped tomatoes
14.5 can corn, drained
1 c shredded cheddar cheese
1/2 c green onions
1/2 c tomatoes, chopped

preheat oven to 375.

brown meat and onions in skillet. add green chilies, chili powder, cumin, and salt. spread meat mixture in bottom of greased 8" square dish. spread can of chopped tomatoes on top. then layer corn and then top with cheese.

bake for 30 mins. top with green onions and tomatoes before serving.

one more thing. upon request, here are two pictures of cute baby L.  it's much harder to get pictures of a two month old when all they do is sleep and eat. T on the other hand is constantly moving and getting into things. great for photo ops.
