Autumn Breakfast

E and i are having a great time in nm so far. we left cold, rainy md and are now enjoying sunny, beautiful, 60 degree nm! first of all, T and L couldn't be cuter. maybe i'm biased because i'm aunt page but seriously, can you disagree?

A and i got lots of apples at the store yesterday so i made an apple crisp for breakfast this morning. the whole kitchen smelled like cinnamon apple goodness. it's good just by itself but would also be good with some greek yogurt.

oats, sucanat, spelt flour, almonds, butter, and honey

Apple Granola Crisp

3 lbs apples (peeled, cored, and cut into bite-sized chunks)
juice of one lemon
2 tbs agave nectar
2 tbs cornstarch
2 tsp ground cinnamon
1 stick unsalted butter
1/4 c honey
2 c oats
1/2 c spelt flour
1/4 c sucanat
1/2 cup sliced almonds

preheat oven to 400.
mix apple chunks with lemon juice, agave, cornstarch, and cinnamon until evenly coated. pour into 9x13" baking dish. in large bowl, mix together oats, flour, sucanat, and almonds. melt butter in microwave. stir in honey until combined. pour honey and butter mixture over oat mixture. stir until well combined. pour oat mixture over apples.
bake at 400 for 30 mins. cover with aluminum foil (to prevent topping from burning). bake for 15 more minutes.
