diner tonight was so good - lemon-soy pork tenderloin, garlic roasted red potatoes, and soy green beans. hit the spot.
i love cooking pork tenderloin because it literally tastes good no matter what you do to it. it's like chicken. the "other white meat" can take a variety of sauces, marinades, or rubs. the easiest thing to do is to throw a bunch of ingredients into a bag and marinate it all day. then either grill it or sear it on the stove. you can even simply bake it in the oven. i actually made two different tenderloins today because wegmans sells theirs in packs of two. i did the lemon-soy marinade on one and a cumin-cinnamon rub on the other. both are equally delicious.
Lemon-Soy Marinade
1/2 cup soy sauce
1 tbs worcestershire sauce
4 cloves garlic, minced
2 tbs lemon juice (usually juice of 1 lemon)
1/2 tsp salt
1/2 tsp ground black pepper
1 tbs olive oil
combine ingredients in a large ziploc bag. squish together to incorporate. add 1 pork tenderloin and let marinate at least 2 hours (best overnight or all day).
remove pork from marinade. grill, sear, or bake until internal temperate reaches 145 degrees. let sit for 10 minutes. then slice and enjoy!
Cumin-Cinnamon Rub
2 tsp salt
1 tsp pepper
1 tbs cumin
1 tbs chili powder
1 tbs cinnamon
combine all spices together. rub all over pork tenderloin. let sit in fridge at least 2 hours (best overnight or all day). remove from fridge and grill or sear, turning frequently, until internal temperate reaches 145 degrees. let sit for 10 minutes. then slice and enjoy!
