Home Sweet Home

ahhh, our trip was wonderful, but it's always good to be home.
wait a minute . . . unfortunately, it looks more like this:
 
today, we are having the second blizzard this week! crazy. we arrived home to between 28" and 30". then yesterday it started snowing again and it still continues. we have at least a foot of new snow (on top of the old stuff) it is truly beautiful out there.
so, what's a girl to do when she has a snow day?

bake! i finally tried angela's (from ohsheglows.com) breakfast cake. i have been wanting to try it for a while now and finally had the time to this morning. it was very easy to make but it took 35-40 minutes in the oven. so, next time i will make a batch the night before and then bake them off in the am, right when i wake up. that's right, i will be having this again! the best thing about the breakfast cake is the possibilities are endless. you can change the nuts, flavorings, and toppings on this baby to have a different cake every day of the month.

here's what i used (i changed her recipe a bit):

Breakfast Cake
(makes 3 servings)

1/2 cup hazelnuts
1/2 cup almonds
1/2 cup old fashioned oatmeal
3/4 cup unsweetened applesauce
1 1/4 cup skim milk
1 tsp almond paste
2 tsp vanilla extract
1 tbs agave nectar
1 tbs chia seeds
toppings:
1/2 banana, sliced
5 dark chocolate chips

preheat oven to 350 degrees.

combine all ingredients (except toppings) in blender and blend until smooth. grease 3 ramekins and divide batter among the three.

add toppings and bake for 35-45 minutes until golden brown (the inside will still be goey).
