Hooray for Chin-Ups!

i did it! today was chin-up day and i rocked it! too bad i don't have a picture but it felt so good to reach my goal. now, i just have to keep it up . . . 2 chin-up, here i come - or maybe even a pull-up.

so, about dinner. tonight we had roasted vegetable bison burgers and field greens with a red wine vinaigrette dressing. yum! this recipe is super easy and very adaptable. you can really roast pretty much any veggie you have on hand as long as you chop it up very small. you could also use ground beef or ground turkey but i like bison because it's so lean. i put some cheese on top to melt too. mmm, feta complimented the burger perfectly.

Roasted Vegetable Bison Burgers
(makes 5-6 burgers)


1 medium zucchini, chopped into 1/4" cubes
1 medium yellow squash, chopped into 1/4" cubes
1 small onion, chopped into 1/4" cubes
3 medium carrots, chopped into 1/4" cubes
4 cloves garlic, minced
extra virgin olive oil
salt
pepper
1 lb ground bison
1/4 cup egg whites or 1 small egg
1/8 cup whole wheat bread crumbs
1/8 cup grated parmesan cheese


preheat oven to 425 degrees.

chop all veggies and toss together with olive oil, salt, and pepper and roast on a foil lined baking sheet for 20-30 minutes until browned and tender.

let vegetables cool. toss remaining ingredients together with hands and form into patties. grill over high heat for 4-5 minutes per side depending on how well you like yours cooked.

remove from heat, top with cheese, if desired, and cover loosely with foil until ready to eat.
