one of the nice things about cooking for my trainer, G, is that i get to make extra and have dinner for E and i. G is always requesting things i don't normally make but are yummy to have every once in a while. tonight i made carne asada marinated skirt steak with mushroom risotto. he loves risotto and admits that he eats the whole container i give him in one sitting (he's a big guy!).

this dinner was so good and felt like an indulgence. i used a different carne asada marinade recipe this time. (to see which one i used last time, look here.) i found this recipe on recipe zaar. you can check it out here. i love marinades. they impart so much flavor with little work. basically mix all the ingredients together in a ziploc bag and let it sit overnight. cook it the next day and viola - super flavorful yet super easy dinner!
this recipe proved to be wonderful! very flavorful. its full of citrus (lemon, lime, and orange) as well as lots of garlic and jalapeno. i still like the last one i made a little more but this one is great too. and, as always, the risotto was wonderful. here is my old standby risotto recipe. although this time i used mushroom broth instead of chicken broth. it was wonderful!
