12 Days of Christmas Cookies - Day 3 - Cornmeal Sparkles

so, long story short, this was a horrible cookie! i used a recipe i found online and i was very excited because i didn't have to change much in this recipe to make it healthier. i used my trusty whole wheat pastry flour instead of all purpose flour. i decided not to mess with the sugar since the entire recipe only had 1/4 cup. the cookies are rolled in a little sugar to give them the sparkles, but again, i figured if i changed that i would have the change the title. so, i decided the sugar stays.

they turned out very pretty and sparkly. looks can be very deceiving though. they are not very sweet though. in fact, they really have no flavor at all. its almost like a dense mini corn muffin. i am thinking perhaps adding some vanilla extract would give it some flavor, but i'm not willing to waster all those ingredients again for them to turn out just as badly.

i must say, 3 days in, i am getting a little discouraged. i have never been a "baker" and i was half hoping this 12 days of christmas cookies mission would improve my baking skills or at least improve my faith in the baking. it hasn't happened yet. 9 more cookies to go. i hope you'll stick with me. it can only get better from here.
