Clean Barbecue Chicken Pizza


E is traveling tonight. that means i am on my own for dinner again. i remembered that mom saw a recipe in the new (january/february) clean eating issue that she said looked good. so, i invited mom and dad over for dinner to try out the barbecue chicken pizza.

we started out with a glass of pepperwood grove pinot noir and some pita chips. gotta stay fueled for the diner prep.

i recently found whole wheat pizza dough at trader joe's and was so excited. i couldn't wait to try it out tonight.

i chopped the veggies while my momma kept me company.

mixed up the barbecue sauce

i decided to use the last bit of leftover turkey instead of chicken since it was already cooked and i needed to use it up today. can you believe it's been a week since thanksgiving already?!

time to roll out the dough and assemble everything.

a side salad (field greens, shredded carrots, tomatoes, and caesar vinagrette)


Barbecue Chicken Pizza (adapted from clean eating magazine)
(serves 4)

1 tbs olive oil
2 medium onions, thinly sliced
4 oz baby bella mushrooms, thinly sliced
1 medium orange bell pepper, thinly sliced
1/2 lb turkey breast, cooked and cut into strips (can use chicken too as the title implies)
6 oz tomato paste
4 tbs apple cider vinegar
1 tbs honey
1 tsp onion powder
1/2 tsp garlic powder
2 large cloves garlic, minced
1/2 tsp smoked paprika
ground pepper
16 oz whole wheat pizza dough
1 c shredded low-fat mozzerella cheese
1/4 c grated parmesan cheese

preheat oven to 425 degrees.

combine ingredients from tomato paste through pepper in a small bowl. whisk barbecue sauce together until well combined and set aside.

heat oil in large skillet. add onions and saute until tender and browned. add mushrooms and bell pepper. saute for 2-3 more minutes until all veggies are tender. remove from heat.

roll out pizza dough until 1/4" thick. if you like thin, crispy crust (like me) poke the crust all over with a fork (optional). spread barbecue mixture onto crust. top with sliced turkey/chicken. spread sauteed veggies on top of turkey. sprinkle both cheeses on top of veggies.

bake at 425 for 15-18 minutes until cheese is browned and bubbly. remove from oven and slice into 8 pieces.

the pizza turned out delicious! it was seriously really good. just the perfect amount with the salad. i had one piece and was tempted to go back for another but decided i was full enough (how responsible of me - and totally unlike me). i really liked the trader joe's whole wheat pizza dough. i will definately be getting that again.

after dinner, we had a piece of dark chocolate and then roxy and i had some snuggle time. we are all ready for bed. goodnight!
