Spinach Mushroom Balsamic Pizza

this pizza was awesome! i used a pocket-less whole wheat pita (perfect for individual pizzas) and sprinkled some shredded gruyere on the pita. then spread out some sauteed shallots and garlic on the cheese and fanned some shiitake mushrooms out over the shallot mix.
while this baked at 400 for 15 minutes, i reduced some balsamic vinegar over medium heat. when the pizza came out of the oven i added a handful of baby spinach and drizzled the reduced balsamic over the whole thing. perfection!
i thoroughly enjoyed every bite. that's the wonderful thing about pizza, the possiblities are endless and you can make whatever you want. personal pizzas are even better because you can experiment with what sounds good to you and you don't have to answer to anyone else because it's all yours.

so, next time you make pizza, branch out, try something new. or, try the spinach mushroom balsamic pizza and enjoy the possibilities!

  1. You gotta love the iPhone. I didn't know what to make for dinner - I remembered this post, pulled up your blog, and we just enjoyed this pizza. I also made one with some other things we had around - blue cheese, a bit of mozarella, cranberries, walnuts, spinach and balsamic. Amazing!

    Oh, I also brushed some olive oil on the bottom of the pitas to get them extra crisp. It was worth it.
