Clean Eating Cookies


i have that bad feeling in my glands. you know the feeling like you may be fighting something off? i took 2 echinacea and had a strawberry banana smoothie full of spinach and kale. i'm not sure that this will exactly help, but as i am sipping my chai green tea, i can't feel my glands anymore. so, we'll see.

i actually ended up cooking today. i have a client who is running in 4 marathons in 5 months. i am making him 7 meals a day - seriously, it's a ton of food. anyway, he is off to korea for his second marathon this week. i cooked for him today (instead of his usual cook day, monday) so he would have 3 full days of meals this week because he leaves thursday. although i have to say, going to the grocery store on the weekends makes me grumpy. i like going my usual weekday mornings time of 8:30 when it isn't crowded. because my job requires me to be at the grocery store a lot, i like to at least get in and out. on the weekends, people are meandering around, stopping in the middle of the road, and acting like they are the only people in the store. this drives me insane and i can feel myself getting mad. i need to work on that i guess.
after i was finished making his meals, i decided to try the almond butter chocolate chip cookies on the last page of the march/april clean eating magazine. cookies always make me feel better:)

they were really easy to make and only have 6 ingredients. they turned out a little crumbly, probably because they don't have any flour in them but they were very tasty. (i thought about my sister-in-law, A when i made these. M, you have to try these!!)

i used slices of a dark chocolate orange and i really liked the orange flavor coming through. i added some ground flaxseeds and less sucanat too because the almond butter i had on hand had a little cane sugar in it.
Almond Butter Chocolate Chip Cookies
Adapted from Clean Eating Magazine, March/April 2010
(Makes 24 Cookies)

1 cup almond butter, stirred well
1/2 cup sucanat
1 large egg
1/2 tsp baking soda
2 tbs ground flaxseed
1/2 tsp salt (only if your almond butter is unsalted - i omitted this)
3 oz dark chocolate (70% cocoa or greater), chips or a bar broken into small pieces

preheat oven to 350 degrees.

mix together all ingredients except chocolate until well combined. add chocolate and stir until incorporated. drop teaspoonfuls onto parchment lined baking sheets.


bake for 12 minutes or until golden brown on top. remove from oven and let cool on baking sheets. do not forgo this step. cookies are very crumbly until cooled.
