Caesar Salad with Garlic Shrimp

wegmans has some wonderful pre-cooked shrimp with lots of garlic, old bay, and parsley at their seafood counter. i'll occasionally get some to add to a salad for a quick, easy, pre-made lunch. the bonus? they tell you what's in them on the label. ingredients: shrimp, olive oil, herbs, garlic, and old bay.


as i passed by them the other day, i decided to try and make them myself. tonight was the night! i used parsley, salt, and pepper as the "herbs"and topped them on a wonderful caesar salad made with romaine, baby spinach, grape tomatoes, and shredded parmesan. yes, i know some of you are caesar purists and would never use spinach and tomatoes but i wanted some extra veggies. it was light, filling, and delicious!


according to my taste buds, i nailed the shrimp! they are garlicy and delicious! not for the faint of heart and those garlic shy. but if you love shrimp and a little bite, these will be perfect for you.



Old Bay Garlic Shrimp

1 lb jumbo shrimp, peeled and de-veined
2 tbs extra virgin olive oil
2 tbs minced garlic
1 tsp old bay seasoning
1/4 cup chopped parsley
salt and pepper

heat a large skillet over medium heat. add olive oil and saute shrimp on each side for 2 minutes until just pink. remove from skillet and place in a large bowl. add garlic to skillet and saute for 1 minute. remove skillet from heat and scrape remaining olive oil and garlic into bowl of shrimp. add old bay, parsley, and a little salt and pepper. stir well to combine and serve warm.


Caesar Dressing

1/4 cup greek yogurt
1/4 cup olive oil mayonnaise
2 tsp dijon mustard
2 tbs red wine vinegar
1 tsp anchovy paste
1 tbs worcestershire sauce
2 cloves garlic, minced
1/4 tsp freshly ground pepper

combine all ingredients in a small food processor and blend until smooth. store in airtight container in fridge for up to 2 weeks.
