Strawberry Rhubarb Crisp

i came home from cooking yesterday and was craving vegetables. i am pretty sure those words would have never entered my mind let along escaped from my mouth (fingers?) 2 years ago.
a nice veggie wrap was in order. i used a whole grain wrap and filled it with trader joe's garlic hummus, sprouts, shredded carrots, roma tomatoes, and sliced avocado. as i was slicing the avocado i realized i shouldn't let the rest of the half go to waste so i whipped up some guacamole. i could have made a whole meal out of just the guacamole. a few tostitos natural chips, some sunshine, and a new clean eating magazine and i was a happy girl.
after a nice walk with the dogs, i made the back inside cover recipe from the newest clean eating magazine for my dinner with L tonight.
strawberry rhubarb crisp is perfect for early spring because rhubarb is coming out as are strawberries!
for dinner, L had marinated some chicken breasts in a herb/buttermilk mixture (she promised to send me the recipe - i'll post it when she does) and frozen them a couple of weeks ago. she thawed them out, thew them on the grill while i tossed the orange spinach salad and after 10 minutes, dinner was ready. so quick and easy!
i popped the crisps in the oven while we ate dinner. the chicken was so flavorful and tender. buttermilk is a fabulous meat tenderizer. and, of course the grill gives so much flavor too. the spinach salad was pretty good. i don't think i'll use mandarin oranges in it again though. it ended up just too sweet. fresh orange segments would have been much better. even though i rinsed the mandarin oranges they still had that "ive been sitting in sugar syrup in a can for a year" taste.
the strawberry rhubarb crisps did not disappoint though. so tasty and the mix of sweet from the strawberries and tart from the rhubarb is so fantastic. a small scoop of vanilla ice cream on top and it's a la mode. yum! pick up the newest issue of clean eating and try it this weekend. the crisp would make for a great easter dessert.

i can also attest that it is good for breakfast too with a little greek yogurt:)
