Almond Oatmeal Chocolate Chip Cookies

crumbly almond chocolate goodness. these cookies melt on your mouth! the almond flavor really comes through from the almond butter. they taste better than my favorite oatmeal chocolate chip cookie recipe.

i made clean eating's almond butter chocolate cookies a while back and they were so good. i made them again yesterday but decided to try a few changes. they turned out even better in my opinion (i got a thumbs up from my niece and nephew too)!

i used a little less sugar, added some oatmeal and used chocolate chips instead of chunks. oh, i also added some vanilla extract and it livened up the flavor a bit.

Almond Oatmeal Chocolate Chip Cookies
makes 25 cookies

1 cup almond butter, stirred
2/3 cup sucanat
1/2 cup oats
1 large egg, beaten
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp sea salt
1/2 pkg dark chocolate chips (i used ghiradelli semi-sweet)

preheat oven to 350 degrees F.

combine all ingredients together in large bowl. stir until well combined.

drop teaspoon size cookies onto parchment lined baking sheets. bake at 350 for 12 minutes.

let cool completely. store in airtight container.
