the weather has been so amazing here (in the 70's and 80's) that i have been spending as much time outside as possible, thus my mia status recently.
this morning i made oatmeal pancakes with a side of strawberries. so yummy with a little maple butter on top.
for lunch, i had a veggie wrap (with hummus, sprouts, roma tomatoes, carrots, cucumber, and romaine lettuce) with some new "food should taste good" chips i just got to try - potato and chive. they are very yummy with just a hint of chive flavor. i haven't tried all the flavors yet, but so far, multigrain is my favorite.
i also tried some chocolate covered goji berries. first, let's just discuss goji berries a little bit. they have been eaten for generations in china are are believed to treat many common health problems like diabetes, high blood pressure, and fever. goji berries can be eaten raw, cooked, or dried. goji berries also have compounds rich in vitamin a that may have antiaging benefits. some research suggests that goji berry extracts may boost brain health and may protect against age-related diseases such as alzheimer's.
so, these chocolate covered dried goji berries are quite good. some kind of consistency as chocolate covered raisins but more health benefits!
one final thought . . . as i was printing the menu for my client today i realized i have exactly 6 months left of my 20's. yikes! i better get to it:)
