this summer, i had a series called the weekly nightcap. i certainly had a great time testing cocktail recipes but it seemed to fall to the wayside due to colder weather. i find myself drinking a glass of wine at night in the winter. something about a glass of red or a glass of white is cozy to me.
however, as i mentioned yesterday, temperatures have been mild this year so far so i found myself trying something new the other night. truth be told, i have never been a big cosmopolitan fan. i know, i know, back in the day i liked sex in the city as much as the next girl, i just never got on the cosmo wagon. perhaps it's because i'm not the biggest cranberry fan. it tastes too tart for me.
but this whipped cosmo was right up my alley. i cut the tang and tart of the cranberry with the ultra smooth, creamy whipped vodka. then, because i can't leave well enough alone and love a little bubbly, i topped it off with just a splash of tonic. although it would have been tasty with a top-off of prosecco or champagne too.
i added a little half rim of red sprinkles to bring a valentine's twist to this drink. i thought it looked pretty with the pink drink. hmmm, perhaps this should be called the valentini instead . . .

makes 2 drinks
4 oz whipped vodka
4 oz cranberry juice
dip half the rim of two martini glasses in a bit of water and then press sprinkles onto rim if desired.
in a shaker filled with ice, combine vodka and cranberry and shake vigorously. strain equally into sprinkled rimmed glasses and top each glass with tonic.
