Pecan Crusted Mahi Mahi

i am always looking for quick and easy fish ideas. here at the wasti household, we try to eat seafood twice a week. one, because we love all kinds of seafood (i am a born a bred marylander after all) and two, it's good for you!


tonight i pulsed up some pecans (1/2 cup) in the food processor, with a little salt (1/2 tsp), cinnamon (1/2 tsp), nutmeg (1/8 tsp), and pepper (1/4 tsp). after a quick brush on each side of the mahi with honey mustard (two parts dijon mustard, one part honey) each piece of fish got a coating of the pecan mixture. a quick saute in the pan with some olive oil was all it took to bring a main dish to the table.


an equally quick and delicious lemon parmesan kale salad as a side brought a complete meal to the table in under 15 minutes. that's what i call weeknight perfection!
