Happy Cinco de Mayo!

happy cinco de mayo everyone (or should i say feliz cinco de mayo?). what can i say, i am fluent in spanglish.

E and i are off to miami for the weekend for some wedding celebration with my college besties but i wanted to give you some quick suggestions for any cinco de mayo celebrations you may be doing today - or even this weekend. (i'll be having a celebratory margarita on the plane:)


if you haven't made these margarita cupcakes, these should be at the top of your list - it's like a dessert and a drink all in one. everyone who tried one of these loved them.


E is a big fan of steak fajitas. if you have the time to marinate the skirt steak overnight, the little bit of extra time and forethought will be well worth it. this is hands down the best carne asada marinade i have ever made for fajitas. it has garlic, lime, orange, cilantro, chili powder, and mexican oregano. the flavor it gives the meat is out of this world. all you need is some grilled onions and guacamole and you have some of the best fajitas you will ever have. promise.


speaking of guacamole . . . how about a big spoonful on some garlic and lime fish tacos?


thinking of making empanadas, i have a couple suggestions for you. how about turkey empanadas, elk empanadas, creamy chicken empanadas, or bison empanadas?


if you are craving something creamy and cheesy, look no further than these ooey, gooey, super yummy green chicken chile enchiladas. i adapted these from the pioneer woman herself. need i say more?


and, last but not least, one of my favorite ways to celebrate is a margarita (well a close second to prosecco and a martini!). this grapefruit margarita is so clean and refreshing. it's a fun spin on a traditional margarita.
