E and i took a little winter vacation to antigua this past winter. we spent time soaking up the sun, reading, relaxing, and ended up drinking nutty punch practically all day long.
i'm not sure of the exact ingredients but it tasted like a pina colada with amaretto, so i decided to try and re-create it at home. what better time than the hottest weekend of the year?
it may be almost as good as i remember, but doesn't everything taste better on vacation? it's close enough though. after one sip, E said "i declare friday nutty punch day!"
needless to say, E and i will be enjoying this tonight and pretending we are in antigua with that wonderful ocean breeze.
makes 2 drinks
3 oz light rum
2 oz dark rum
2 oz amaretto
3 oz coconut cream
6 oz pineapple juice
2 dashes Angostura bitters
blend all ingredients together to reach desired consistency. pour into two glasses and enjoy!
