Sour Cream Cookies with Cream Cheese Icing
if your sweetie isn't into sweets (like my husband), these are the prefect cookies for valentine's day. the cookie themselves are tender and slightly sweet, almost biscuit-like. the cream cheese icing adds just enough sweetness and creaminess to this cookie.
some colorful sprinkles make this fun enough for valentine's but not over the top. whip a batch up for the someone special in your life or your girlfriends. if you made these for your co-workers you may be an office favorite for the day too.

Sour Cream Cookies with Cream Cheese Icing
adapted from anecdotes and apple cores
makes 5 dozen cookies
1 stick butter, softened
1/2 cup sugar
1 egg
1/2 cup sour cream
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3 cups cake flour
cream together butter and sugar. add egg then sour cream and vanilla and beat until smooth and well-combined. whisk together dry ingredients in a separate bowl. gradually add flour mixture to butter mixture to form a dough that is stiff enough to roll out. wrap in plastic wrap and refrigerate 30 minutes before rolling out.
preheat your oven to 375 degrees F. roll out dough to 1/4 inch thickness on a well-floured surface. cut out shapes and place on parchment lined cookie sheet. bake for 8-10 minutes.
frosting:
1/2 stick butter, softened
4 oz cream cheese, softened
1 cup sifted powdered sugar
1 tsp vanilla
cream together butter and cream cheese. add vanilla and slowly add powdered sugar and beat until well-combined. spread icing onto cooled cookies.
