i was looking through photos the other day and i noticed one that was lost among the masses. i made a mini version of my mom's favorite chocolate fudge tart for her surprise birthday dessert party.
it is the same recipe as the full-sized tart but i thought it was worth re-posting because it's amazing. seriously, every time i make this tart, it is met with rave reviews and "can i get the recipe" requests.
i decided after i made them mini size that i like this way even better than the full-sized tart. who doesn't love bit sized desserts? plus, i think you get more whipped cream per bite which is one of life's little pleasures.
don't skip the whipped cream - it makes this dish!

Mini Chocolate Fudge Tarts
makes 24 mini tarts
homemade pie dough or store bought pie dough
filling:
8 oz good semisweet or dark chocolate
3/4 stick butter
scant 2/3 cup sugar
2 eggs, beaten
pinch of salt
preheat oven to 400 degrees F.
roll out pie dough and cut into 2 3/4" rounds (i used a large biscuit cutter). press 24 circles into greased mini cupcake tins. bake for 5 minutes.
meanwhile, melt the chocolate and butter together in a heavy saucepan over low heat. remove the pan from the heat and add the sugar, then the eggs and salt; beat well.
reduce oven to 375 degrees F.
pour the filling into a piping bag or medium ziploc bag with corner cut off. pipe chocolate into tart shells and bake for another 10 minutes or until just set.
serve warm or room temperature, with whipped cream.
