Dark Chocolate Orange Pots de Creme
yes, these are as decadent as they look and sound.
the pioneer woman made chocolate orange pots de creme the other week on her food network show and of course i had to whip myself up a batch. as expected, they are delicious. i actually ate mine one afternoon instead of a cup of coffee for a little pick-me-up. it worked.
next time i will experiment a little and try different liquors . . . i'm thinking baileys, amaretto, and even whipped vodka. i'll keep you posted!

Dark Chocolate Orange Pots de Creme
makes 12 servings
adapted very slightly from the pioneer woman
1 - 10oz bag + 1/3 cup semi-sweet or bittersweet chocolate chips (i used ghirardelli 60% bittersweet chips for extra dark chocolate taste)
4 whole eggs
2 tbs orange liquor (i used cointreau)
1/8 tsp salt
1 cup very hot strong coffee
1 cup heavy whipping cream
1 tbs powdered sugar, sifted
1 tsp orange liquor
place the chocolate chips into a food processor. pulse until broken up slightly. add eggs, orange liquor and salt. process until combined. with motor running, slowly pour in coffee in a slow, thin stream (you don't want to add it too fast or it will cook the eggs). process until well combined and smooth. divide mixture into 12 small ramekins - i used small ball jars.
cover and refrigerate at least 3 hours or overnight.
when ready to serve, make whipped cream. in the bowl of a very clean, dry electric mixer, add cold heavy whipping cream. slowly bring speed up to high and once it starts to thicken slightly, sprinkle in powdered sugar and add orange liquor. continue to beat until thick and peaks form. spoon whipped cream onto pots de creme and serve.
