The Weekly Nightcap - Cucumber Limoncello Splash

for some reason, to me, limoncello is a winter drink. it probably has something to do with the fact that i usually make mine around september so it can steep for 80 days and be ready to give as christmas gifts.



i seem to forget about it when summer rolls around but it quite possibly may be best enjoyed in the summer. a couple sips of cold, refreshing lemon infused vodka sounds quite civilized enjoyed on a warm summer evening on the deck with friends, doesn't it?


i had some cucumber lying around in the fridge that needed to be used so i added that to the drink for an even fresher tasting summer elixir.



Cucumber Limoncello Splash
serves 2

6 slices english cucumber
1/2 tsp sugar
2 ounces limoncello
2 ounces vodka
7-up

muddle 4 slices of cucumber with sugar in a shaker. add limoncello and vodka and shake vigorously. strain into two rocks glasses filled with ice. top with 7-up and garnish glasses with remaining cucumber slices.
