Slow Cooker BBQ Chicken
it feels almost wrong posting this as a recipe. it's so ridiculously easy but so good i decided to share it with you anyway. this is the perfect weeknight meal. it takes less than five minutes to prepare and then the slow cooker does the rest of the work. when you arrive home that evening, your house will smell amazing.
i recommend throwing together a quick salad and voila! dinner is ready!
the best part about this recipe is it is totally tweakable. okay tweakable isn't really a word but it sounds good. all you need is your favorite bbq sauce. i have used everything from my favorite bone suckin' sauce, to wegmans bbq sauce, to our local corner stable bbq sauce i pick up when i get take out baby back ribs. i also like to mix things up by using breasts and thighs because i like both but you could use all white meat or all dark meat.
Slow Cooker BBQ Chicken
6 servings
1 1/2 lbs boneless skinless chicken breasts
1 1/2 lbs boneless skinless chicken thighs
1 jar (16 oz) of your favorite bbq sauce (i recommend bone suckin sauce
1 medium onion, finely chopped
1 tbs garlic, finely minced
1/4 cup brown sugar (optional depending on how sweet you like your sauce)
1/4 cup apple cider vinegar
layer chicken in bottom of slow cooker. mix together remaining ingredients and pour over chicken. cook on low for 6-7 hours. let cool and remove chicken from sauce. shred chicken and return to slow cooker. serve on whole wheat rolls and enjoy!

1 jar my favorite salsa
1/2 cup chicken broth
Cook on low for 10 hours in slowcooker. Shred and enjoy over salad greens with sour cream and shredded cheddar. Amazing.
