Apple Brown Sugar Glazed Pork

M had a new recipe we tried out last night - apple brown sugar glazed pork. we used pork chops but you could easily used a roast or a tenderloin.
ah, the other white meat. pork is so wonderful and versatile. pig just may be my favorite edible animal. after all, bacon comes from the wonderful pig. but the pork chop is very versatile as is the tenderloin.

if you have been reading this blog at all, you know i love the pork tenderloin. the key to cooking pork is to not over-cook it! i find that cooking it just to 140 degree F internal temperature and then letting it sit, covered loosely for five minutes is the key to tender, perfectly cooked pork. if you are using thick pork chops, i would use a meat thermometer to see when they have reached 140 degrees F. if you are using thinly cut pork chops (as we did), just sear them 2 minutes per side, and you're done!
the recipe is very easy to make and with a side of potatoes and some parmesan zucchini, it made for a very quick, easy, yet tasty meal.
lots of help in the kitchen doesn't hurt either, neither does a good margarita!
 

Apple Brown Sugar Glazed Pork
(serves 4-6)

1/2 cup apple juice
1/4 cup brown sugar
3 tbs olive oil, divided
1 tbs soy sauce
1 tsp grated fresh ginger or 1/2 tsp dried ginger
2 tsp corn starch
1/2 cup water
4-6 thinly sliced pork chops
salt and pepper
 
combine apple juice, brown sugar, 1 tbs olive oil, soy sauce, and ginger in small sauce pan. heat over medium heat, stirring occasionally. 
meanwhile, whisk together corn starch and water in small bowl until corn starch is dissolved. once brown sugar mixture comes to a boil, add in corn starch slurry and whisk constantly until sauce thickens. once thickened, turn heat to low and let simmer on low.
in skillet, add remaining 2 tbs olive oil and heat to medium high. season both sides of pork chops with salt and pepper.
once oil is hot, add pork chops and cook for 2 minutes per side. remove and place in heat proof dish.
pour warm, thick brown sugar sauce over pork chops and cover with foil. let sit for 5 minutes. serve pork chop and spoon sauce over each one.
