Happy Omega-3 Day!

today is omega-3 awareness day! i guess there is literally a day for everything. there is a website that tells you all of the "national days" and i just pick the ones i like:) except omega-3 day wasn't one there, weird.

anyway, here is some info straight from the omega-3 website:

anyway, i thought that was one of the best explanation of omega-3's that i've heard. of course wikipedia is always good too. so, in honor of today, have some ground flaxseeds, chia seeds, salmon, or walnuts - your body will thank you.
so, on to our yummy dinner. i tried cooking a pork shoulder in the crock pot monday for the first time. it didn't turn out as well as the oven because it never got that wonderful crust that i like from the heat and the rub, but it was nice to throw it in there and not have to worry about it. luckily, i put the instant read meat thermometer in there though because the spice packet i used said it would take 8 hours on low. it ended up being in the crock pot for 11 hours on low until the internal temp reached 200 degrees. the pork turned out well despite the extra time. i would definitely make it again in the slow cooker due to sheer ease and no supervision needed. it was very tender and flavorful.

tonight, i made pork tacos with the pulled pork. i also made a cabbage slaw with a lime vinaigrette to go into the soft taco shell. the crunch of the slaw complimented the pork very well and i added a little drizzle of organic ville original bbq sauce.
this bbq is pretty good and it's sweetened with agave nectar instead of sugar which is always a plus in my book. i know bbq sauce is a very personal thing and truthfully, i don't think i've found my favorite yet. it's fun and tasty looking though:)

Garlic Caper Herb Sauce

i found this sauce for fish in the latest clean eating magazine (march/april 2010). i tried it tonight on some halibut and served it with sauteed green beans and whole wheat garlic couscous.
it was wonderful! it had a fantastically creamy garlic taste with a nice freshness from the parsley. a very smooth tang that went perfectly with the mild fish flavor. for some reason fish with pesto-type sauce reminds me of summertime. oh how i wish spring were around the corner. it's on its way soon, i hope, soon.

in the meantime, here is the recipe for the sauce. the recipe called for trout but i had some halibut, so that's what i used. i changed it up a little bit added more garlic and capers as well as a little bit of olive oil. but the following is the recipe in the magazine.

Garlic Caper Herb Sauce (from clean eating magazine)

1-1/2 cups loosely packed flat-leaf parsley
3 green onions cut into roughly 1-1/2 in pieces
1/4 cup capers drained
1/4 cup non-fat plain Greek-style yogurt
3tbsp Parmesan cheese grated
1 clove garlic
1/4 tsp ground black pepper, divided

In food processor combine parsley, onions, capers, yogurt, cheese, garlic, and ¼ tsp of pepper until smooth.

Spicy Turkey Chili

i have done so many variations of the chili that i have lost count. it's such a great winter meal and so easy to make. just throw everything into the crock pot and 8 hours later when you get home, it's done. i love to have it for lunches during the week.
i made this version spicier and added avocado and a dollop of the spicy lime sour cream i made the other day. so good! if only i had some cornbread to go with it. i am still working on perfecting my cornbread recipe . . .

this chili can be changed really easily too. add kidney beans if you like those, add more veggies (mushrooms and zucchini are good in this too although not traditional chili additions), omit the turkey and add more beans if you want vegetarian, use ground beef or bison if you want red meat. lots of possibilities. use your imagination!

Turkey Chili

1 lb ground lean turkey (i use 99% fat free)
1 medium onion, chopped
1 green pepper, chopped
1 orange pepper, chopped
1 large zucchini, chopped
1 jalapeno, seeded and minced (add another if you like it spicier)
15 oz can black beans, drained and rinsed
15 oz can no salt added corn, drained (frozen corn works too)
15 oz can diced tomatoes and green chilies
28oz crushed tomatoes (no sugar added)
2 tbs cumin
2 tbs chili powder
1 tbs garlic powder
1/2 tbs onion powder
2 tsp salt
1/2 tsp red pepper flakes (adjust depending on your spice level)

brown turkey in skillet over medium high heat until just cooked through. dump into crock pot along with all other ingredients. stir well and cook on low for 8-10 hours.
